South Tampa is bursting with amazing foodie gems, but the latest to catch our attention is American Cookie Co. Owner Roula Thibaudeau, along with her husband, bake big batches of super thick, melty cookies and serves them out of the bakery box window on Saturdays. This mini but mighty cookie company currently does all of its baking inside Pro Kitchen Hub right next door (it’s also in the same plaza as the equally great State Flour Bakery).
Those who have a hankering for a big cookie can order in advance online. You can always roll the dice and pull up on any Saturday from 12pm-6pm to see what they have in stock. Their exquisite red velvet cookie, drizzled with white chocolate and filled with white chocolate chips, is almost too pretty to eat.

A sweet spot that opens up just once a week
The classic chocolate chip cookie is perfection. It’s a haymaker of decadence with chocolate chips that expand like delicate threads when you pull the cookie apart.
Other recent cookies have included a funky birthday cake cookie topped with frosting, a Snickerdoodle cookie filled with white chocolate chips, a tasty (and nostalgic) oatmeal raisin cookie, and an M&M-chocolate chip cookie crossover.
