Tampa’s Boulon Brasserie just leveled up its bakery menu, and honestly, the rest of us need to sit down and think about what we’ve been doing with our mornings.

Nestled in Tampa’s Water Street neighborhood, Boulon (1001 Water St) has always been the kind of place that makes you feel like you accidentally wandered into something much classier than you deserve. And now, with a freshly reimagined bakery menu running seven days a week from 7 am to 3 pm, they’re giving you no excuse not to start your day in a minor state of luxury.

Let’s talk about what’s actually on this menu, because it’s a lot. On the savory side, there’s a Jambon Gruyère Croissant, which is just a ham and cheese croissant wearing a tuxedo. There’s also a Spinach Croissant for the people who need to feel like they’re making responsible choices. The Saucisson Sandwich brings together pork saucisson and egg fontina, which sounds like something a French chef invented while dramatically staring out a window. And the Muffuletta Sandwich, loaded with jambon de Paris, saucisson, comté, and olives, is the kind of thing that makes you question every sad desk lunch you’ve ever eaten.

Then there’s the Chicken Salad Croissant made with tarragon aioli, pecans, tomato, and lettuce. Tarragon aioli. On a croissant. This isn’t a sandwich, it’s a personality trait.

And they didn’t forget the sweet side either. The Guava Chausson, a flaky pastry filled with guava, is proof that some cultural crossovers are genuinely wonderful and we should celebrate them.

Boulon’s concept, which they describe as “French by way of America,” celebrates local flavors fused with French culinary traditions, and this bakery menu is that philosophy showing up to work early and absolutely crushing it.

The bakery is open daily from 7 am to 3 pm in Water Street Tampa. You can check out the full menu on their website.
