State Flour Bakery has just a few chairs inside its intimate South Tampa shop. When you enter the bakery at 5224 S Dale Mabry Hwy you will be enchanted by the alluring scent of fresh baked sourdough bread, pain au chocolate, and blueberry muffins. These delights are meticulously spread on a small counter. However, the true stars of the show at State Flour Bakery are the sourdough croissants.
The Pistachio variety has a transfixing emerald glow, and the guava croissants have a ruby-red effervescence that would put Dorothy’s heels to shame. These croissants are huge, by the way. One could comfortably feed two diners respectively.

Additionally, State Flour offers gluten-free brownies, and had GF apricot blondies on display on a previous visit.
State Flour Bakery is a local labor of love
“State Flour Bakery is more than just a bakery; it’s a place where community and creativity blend seamlessly,” writes co-owner Alex Flannery. “The heart and soul of our bakery lies in our one-of-a-kind sourdough croissants. These delectable pastries are true works of art, featuring a mesmerizing bi-colored swirl that promises a visual feast even before you take your first bite.”
The appearance of the croissants makes them appealing, but it’s their fillings that truly set them apart. State Flour offers classic favorites like luscious chocolate and velvety almond to innovative creations like tangy fruit compotes and savory surprises.
