Tampa Treasures: Pinky’s Eatery

Breakfast is our favorite meal of the day — that’s especially the case at Pinky’s. The quaint diner is anything but your run of the mill breakfast joint. The menu let’s you saunter the line between healthy and hearty. While you wait for your meal, grab your mug of choice from the cupboard and sip on a steaming cup of coffee.

Listen, the excellence of Pinky’s isn’t exactly a secret. You may have to wait a while for a table, but the dishes are well worth it.

Legendary pancake sandwiches 

If you’re particularly famished we recommend you sink your teeth into the pancake sammy. Grilled country ham, Swiss and cheddar cheese and over easy eggs are sandwiched between two fluffy buttermilk pancakes. Pinky’s goes the extra mile by topping it with jalapeno-pineapple butter and powdered sugar.

More of a traditionalist? The massive fried egg sandwich with two cheeses (Swiss and cheddar), lettuce and tomato is an instant crowd pleaser.

Have a taste for the south? The South Carolina grit bowls burst with resplendent flavors of home. We’d advise you go with the jalapeno cheese grits topped with two poached eggs.

French toast made with sliced Cuban bread

For the those with an insatiable sweet tooth: Fresh off the griddle is the stuffed French toast made with sliced Cuban bread layered with homemade berry cream cheese and topped with fresh fruit and powdered sugar.

We’re also partial to the practice of refilling our own coffee mugs. The service is friendly, the specials are persistent palate pleasers and, inside, it feels like home.
