Te Invito, a quesabirria taco truck, is set to debut in the Tampa Bay region

A celebrated pair of local chefs are showcasing their skills throughout Tampa Bay with a new quesabirria taco food truck concept called Te Invito. The duo of Jesus Bravo and Korie LoVecchio have become a cult favorite in the region for their pop-up Mexican eats, specializing in tantalizingly tasty quesabirria tacos.

After so much underground success, they’re turning the taco game into a permanent business as the new food truck, Te Invito, makes its debut in a soft opening outside of Lingr beginning at noon on Monday, October 18th.

While the quesabirria trend has swept the nation, their iteration of the country’s most popular new style of taco has managed to stand above the rest. The key difference for Te Invito is that they ship in real Oaxacan corn from Mexico, which is ground and milled by hand after putting it through a process known as nixtamalization that not only cleans the corn but enhances the flavor and aroma.

Te Invito uses this fresh-milled masa to make all of their tortillas, which are then fried and stuffed with stewed beef and Oaxacan cheese and served alongside the traditional consommé, a spiced broth meant for dipping the tacos into.

Te Invito is more than just great quesabirria

And while the quesabirria is what draws people in, this food truck is no one-trick pony. The owners’ passion for food and flavor is clear in many of the specials they’ve created in the year since they began experimenting with this concept. One recent such creation was a new take on a Chicken Pipian taco featuring a green pumpkin seed mole with chicken thighs and chicken skin chicharrones on a blue corn tortilla. (Don’t worry, that blue corn tortilla will be sure to have an encore performance.)

In addition to tacos, they also use fresh dough to make conchas, a traditional Mexican sweet roll topped with chocolate, vanilla or strawberry. Te Invito has teased more dessert options to come.
