Maru will offer stunning views of Bayshore Boulevard

Maru, a new rooftop bar near Bayshore Boulevard, will open in Tampa on May 2. The owners made the announcement in a teaser on Instagram. The Japanese-Peruvian fusion spot is located at 2909 W. Bay to Bay Blvd.

Indigo Road Hospitality Group is set to introduce two innovative dining experiences in Tampa Bay with the opening of Maru, a Peruvian-Japanese fusion restaurant, and O-Ku, a sushi concept. The restaurants will be located at Bayshore Gardens, 2909 W. Bay to Bay Blvd., a property acquired by Asana Partners in December 2021.

Maru will open on the rooftop of Bayshore Gardens on May 2. It will offer a unique dining experience with 60 indoor seats and 30 outdoor seats, all providing stunning views of Tampa Bay. According to a press release, this marks the first location of its kind, focusing on Nikkei cuisine — a fusion of Japanese and Peruvian culinary traditions that emerged from Japanese immigration to Peru in the early 20th century.

Maru rooftop bar hours:

  • Thursday to Sunday: 4 p.m. to midnight 
  • Friday & Saturday: 4 p.m. to 1 a.m.

Tampa’s hot new rooftop bar with stellar views

Later this year, the group will also debut O-Ku on the street level of Bayshore Gardens. O-Ku will feature an array of signature nigiri, sashimi, and makimono, alongside chef specialties and curated omakase offerings. The restaurant’s beverage program will include specialty cocktails, varietally correct and food-friendly wines, small production sakes, international and domestic beers, and thoughtful zero-proof selections.

Both Maru and O-Ku are the brainchild of James Beard Award semifinalists Steve Palmer and Kimball Brienza, who aim to bring a sophisticated yet approachable dining experience to Tampa Bay.
