Chef JL Johnston presents an intimate, multi-course omakase.
Each course explores nuance: shifts in texture, preparation and composition that reveal new dimensions of exceptional ingredients. Alongside it are drink pairings chosen to honor the fish, not compete with it.
As with all evenings guided by Chef Johnston, the menu is composed around what the season offers and what the chef decides at the height of his craft. No two seatings are the same.
